Queen St. Gluten Free breads are made fresh at “Yoshi’s Sweets”, a popular, cozy bakery in the beaches area of downtown Toronto. These gluten free breads are then delivered fresh to Ambrosia twice weekly. When “Yoshi’s Sweets” first started making gluten free breads several years ago, they had no idea how popular gluten free breads are! The owners of “Yoshi’s Sweets” were sitting with a friend one day who had a wheat allergy and the conversation of bread came up. He mentioned how hard it is to find a great loaf of gluten free bread. As many are well aware, typical gluten free breads are often either frozen by the manufacturer, or dry and crumbly.
The owners of “Yoshi’s Sweets” were blind to the issues that people living with gluten allergies have, since they did not suffer from any problems with gluten digestion. So the bakers set out on a mission to develop a line of breads that are delivered fresh to the retailer, taste great, hold their shape when sliced, and do not fall apart. A gluten free bread you can actually make a sandwich with!
After months of experimenting with different types of flours, and combinations, kilo and kilos of wasted product and man hours, “Yoshi’s Sweets” finally came up with an original line of gluten free breads! What makes Queen St. Gluten Free Breads so unique, and so delicious is that rather then using rice flour, which is the traditional flour used for making gluten free breads, Queen St. Breads are made using bean flours instead! Bean breads make a richer more moist bread with a lot more fiber and protein than a rice bread.
